Peach Melba Cobbler 

Servings= 2

 

 

Ingredients

  • ½ cup canned, sliced peaches in juice, drained

  • ½ cup frozen raspberries

  • ½ tsp cornstarch

  • ½ tsp water

  • 4  tsp sugar

  • 1/3 cup reduced-fat, all-purpose baking mix

  • 7 tsp fat-free milk

 

 

Directions

  • Preheat the oven to 400 degrees. Combine the peaches and raspberries in a small, ungreased oven-greased, oven-safe casserole dish. Microwave on high for 4 minutes.

  • Mix the cornstarch and water until smooth. Add to the fruit and stir well. Return to the microwave and heat on high for 30 seconds or until slightly thickened. Sprinkle 2 tsp sugar on top and set aside.

  • Combine the baking mix, remaining sugar, and milk. Stir to moisten, but do not over mix. Form a soft dough ball with your hands and turn the dough out on a board sprinkled lightly with flour or extra baking mix.

  • Roll out the dough to the approximate size of the casserole dish to serve as a loose cover for the fruit mixture. Place the dough on top of the hot fruit.

  • Heat the cobbler in a conventional oven for 10 minutes, or until the dough is lightly brown, puffed and the fruit is bubbly.

Apple Crisp  

Servings= 3

 

Ingredients

  • Nonstick cooking spray

  • 2 large baking apples, peeled and sliced

  • 1/3 cup brown sugar

  • ¼ cup whole wheat flour

  • 1/3 tsp cinnamon

  • 1/3 tsp nutmeg

  • 1/3 cup reduced-fat margarine

 

 

Directions

  • Heat the oven to 350°F. Spray a baking pan with nonstick cooking spray and place the apples in the pan.

  • Mix the brown sugar, flour, oatmeal, cinnamon, and nutmeg together and place on top of the apple. Drop dots of margarine over the dry mixture. Bake for 25 minutes.

Brownie in a Mug 

Servings= 1

 

Ingredients

  • ¼ cup whole wheat flour

  • ¼ cup sugar

  • 2 Tbsp. cocoa powder

  • Pinch of salt

  • Pinch of cinnamon

  • ¼ cup water

  • 2 Tbsp. canola oil

  • 1-2 drops of vanilla extract

 

Directions

  • Place flour, sugar, cocoa, salt and cinnamon in a microwave safe mug. Stir with a spoon to mix well and break any clumps.

  • Add the oil, water and vanilla to the cup and stir until smooth

  • Place in microwave and heat for about 1 minute and 40 seconds. You may have to start at 60 seconds and increase until cooked through. (microwaves can vary)

  • Let cool and enjoy!

Strawberry-Raspberry Ice               

Servings= 4

 

 

Ingredients

  • 3 ounces frozen white grape juice concentrate

  • ½ cup water

  • 4 ounces frozen unsweetened strawberries, slightly thawed

  • 3 ounces frozen raspberries, slightly thawed

  • 3 ice cubes (about 1 cup)

  • Sprigs of fresh mint (optional)

 

 

Directions

  • In a food processor or blender, combine all ingredients except mint in order listed.

  • Puree, stirring occasionally. Pour into a large airtight plastic bag and seal. Put bag on its side in a freezer until the mixture freezes solid, at least 2 hours.

  • About 15 minutes before serving, remove bag from freezer and allow ice tea to melt slightly, mashing with fork if needed. Spoon into chilled glasses and garnish with mint. Serve immediately.

Sunny Mango Sorbet 

Servings= 4

 

 

Ingredients:

  • 4 cups coarsely chopped mangoes (about 5 medium)

  • ½ cup fresh lime juice

  • 2 tbsp. sugar

 

 

Directions

  • In a food processor or blender, puree all ingredients. Pour into a large airtight plastic bag and seal.

  • Put bag on its side in freezer for 2 hours, or until sorbet is thick. If mixture is frozen solid, put bag on counter for about 30 minutes, then stir before serving.
